    Read and loved the recipe, but I don’t like coconut. I don’t bake much, but I love to and I follow the recipes. Can I substitute something else or will the cake taste fine without the coconut?

      Oh, it will taste absolutely fine without the coconut! It’ll just be lemon instead of coconut — it’s a wonderful cake, and the boiled frosting is great too.

    I made this for Elvis’s Birthday (don’t laugh! I love Elsvis!) and it is DELICIOUS! The frosting is not as much trouble as it looks on the recipe. It really is a delicious cake – and am making it for my birthday this time too! Thanks Susan for sharing it with us!

          I will be the first to wish you HAPPY BIRTHDAY!!! Do you also have a birthday in June? I always thought if I had a Christmas birthday I would AUTOMATICALLY, as reward for sharing, give myself a birthday in the summer.
